Where have I been? Good grief … I have no idea where the time goes these days! It is just ridiculous. But I am still alive and well which is a very good thing. Last week I was out of town for a few days participating in a wedding and because we only have one working vehicle I was gone longer then planned. This week has flown right on by and it has been busy. Working every morning has been an adjustment and though it is a blessing to have a job, it is tiring me out a bit. Could be that this baby I am making is starting to demand a bit more energy as well. I was foolish enough to think that I would have the entire second trimester free from tiredness … silly mom-to-be … but I am thankful for the month that I had extra energy.
Mostly this week I have been stuck behind a cutting board full of peppers. As I have mentioned before, the peppers did very very well this summer in the garden. As a result I have tons of them to freeze. This is my first year dealing with peppers and I gotta say … they aren’t my favorite. I miss the days of apples and tomatoes where the cutting and chopping was quite limited. I am tired of chopping peppers and I have so far to go. To say that they are time consuming is a huge understatement … but, they are time consuming! There were 5 boxes total and I have 2 of the biggest boxes done and we have been eating lots of fresh ones and so I would say that I am just over half done. How many quarts do I have frozen? Well, I am freezing them in 2-3 cups a bag and from my calculations I am at 25 quarts thus far. 25!!! That is a ton of peppers and I have about that much left to complete. What am I going to do with 50 quarts of frozen peppers? I have absolutely no idea! I put them on pizza, so that will be nice, otherwise I don’t even really care for them. Sigh … it is a lot of peppers and I am praying for a pepper fairy to show up in the middle of the night and finish the rest for me. A girl can hope don’t you think? :)

Maybe I can put a pretty red or green bow on them in a couple months … peppers make a great stocking stuffer don’t you think?

Welcome back, I was starting to get worried. I think peppers are one of the prettier vegetables, but I’m with you, besides on pizza, I really don’t care for them either. Good luck with the pepper fairy!

I think YOU should be the pepper fairy and deliver a bag to porches around your little community…take them to church, or donate them to the grocery store to sell. You already have enough peppers frozen to make a lot of pizza. :)
Maybe next year you could plant only 4 pepper plants.
